I love meals that are easy to make and with little chance of failure because, well, I can't cook. One no-fail recipe is a great alternative to a regular old Taco Night. Try enchiladas! I got my recipe from a Weight Watchers cookbook.
Ingredients
10 ounces cooked chicken -- shredded (I use ground cooked turkey meat)
2 cups scallions -- finely chopped (I use onions)
2 1/2 cups enchilada sauce -- canned
6 inch corn tortillas (or look for those with no fat)
1 1/2 ounces part-skim mozzarella cheese -- grated (I used no fat cheddar, since it was what was on hand)

Preheat oven to 400ยบ F. In a bowl, combine the chicken (turkey), half the scallions (onions), and 1/2 cup of the enchilada sauce.
Soften the corn tortillas, two at a time, by steaming them for 10 seconds.
Spoon 1 cup of the enchilada sauce on the bottom of a 9x11-inch pan. Fill each tortilla with about 1/4 cup of the chicken mixture. Roll each tortilla and place seam side down on the sauce in the pan.
Top with the remaining cup of enchilada sauce, sprinkle with the cheese and the remaining
scallions. Bake for 10 minutes.

Out of the oven--I tried to be "Rachel Ray" and not measure the cheese. Disaster as you can see!
I added some green onions, salsa (my black bean salsa is good with this too), and shredded lettuce.

ReplyDeleteI love enchiladas and canned sauce has become my savior. Since my first attempt at it a few weeks ago, the BF and I eat it at least once a week now. I usually go for the green chili sauce and mix in a bit of cream of chicken for a little salt and extra flavor. And I also cheat by buying those whole roasted chickens and shredding the meat off of them to use.

gah! how i love enchiladas! i haven't made them in forever. my mom has a recipe for an enchilada casserole thing that is pretty good. but i want to try this recipe!
