Elle Can't Cook: Pumpkin Spice Latte

One of my favorite things about fall is the return of Starbuck's Pumpkin Spice Latte. It's a nice little treat I like to give myself when funds are available and I want an instant autumn. However, those lattes can add up; this is where making them at home is cheaper & really easy to do.

Pumpkin Spice Latte
makes 1-2 servings
Ingredients:
2 cups milk
2 tablespoons canned pumpkin
OR 1 teaspoon of Torani Pumpkin Spice Syrup (I had pumpkin on hand, so I used that)
2 tablespoons sugar or sugar substitute
2 tablespoons vanilla extract
1/2 teaspoon pumpkin pie spice
1-2 shots espresso (about 1/4 cup of espresso or 1/2 cup of strong brewed coffee if you don't have an espresso machine.)
Directions:
In a saucepan combine milk, pumpkin and sugar and cook on medium heat, stirring, until steaming. Remove from heat, stir in vanilla and spice, transfer to a blender and process for 15 seconds until foamy. If you don't have a blender, don't worry about it - just whisk the mixture really well with a wire whisk.
Pour into a large mug or two mugs. Add the espresso on top.
Optional: Top with whipped cream and sprinkle pumpkin pie spice, nutmeg, or cinnamon on top.

Feeling super lazy and/or frugal? Try these pumpkin spice creamers in your coffee:

Are you a Pumpkin Spice Latte fan like me? Would you make them at home? Have you?

  1. OHMYDEAR. I've been looking for a pumpkin spice latte recipe for a while now. I, too, absolutely love pumpkin spice lattes, but can only afford to get it if it's a special afternoon. I am SO going to try this recipe! Thanks for sharing, dearest!

  3. I absolutely ADORE you for this post. I have an unhealthy obsession with pumpkin spice lattes and become a very disgruntled girl when Starbucks takes them away from me.

  4. Thanks for this recipe! I was craving a Pumpkin Spice Latte last week and was completely disappointed. It wasn't pumpkin spice enough. I can only find the Sugar Free Torani and I can't stand the taste of sugar free. I have a half can of pumpkin in the frudge so I will be definitely trying this out tomorrow AM!
