I wanted to share 2 fool-proof and tasty recipes I made: S'mores Cupcakes and Spiked Hot Chocolate. Both are perfect for a chilly autumn night. Enjoy.
S'mores Cupcakes
S'mores are such a great treat, but city living doesn't allow for me to whip up a campfire and make s'mores. Fortunately, these s'mores cupcakes recreate the taste without the mess, and are a little more grown up in a way. I created several options, so find what works best for you!Ingredients:
- Box of chocolate cake mix (follow box directions)
- Graham crackers (I crumbled them up, but you can grind them up in a food processor)
- Marshmallows
- Marshmallow fluff
- Chocolate bars (I used Hershey)
Options:
OPTION 1: I put smushed up graham crackers on the bottom of each cupcake liner. I poured in a little cake mix, and added my chocolate bar, poured more mix, and baked according to package directions.
Once there were about 3 minutes left in baking, I added a marshmallow on top and put in the oven to toast. Sprinkle a little more graham crackers if you like on top.
OPTION 2: Put the marshmallow in the bottom of the liner. Cover with cake mix. Top with graham cracker crumbs. Bake and add a Hershey's kiss on top once baked.
OPTION 3: Prepare like Option 1, but instead of adding a marshmallow, once baked, add a graham cracker, cover with marshmallow fluff and add a Hershey's kiss on top (the one pictured is the Pumpkin Spice Kiss).
OPTION 4: Just like option 3, but put the finished product under the broiler (while watching!) for a minute or two to toast the top!

Hot Spiked Chocolate
- Cook hot chocolate according to package directions
- Add Amaretto & stir
- Add cream or marshmallows
- Options: Frangelico, Kahlua, or Bailey's Irish Cream
